Recipe: Campfire Stuffed Poblanos

4 medium poblano chiles, halved and seeded

1 (15-ounce) can refried beans (look for a lower sodium brand)

½ (15-ounce) can low-sodium black beans

2 cups cooked brown rice

1/2 cup Harmons taco simmering sauce

1 cup (4 ounces) shredded reduced-fat cheese

4 ounces Harmons chicken sausage, cooked and cooled

Chopped fresh cilantro (optional)

Place chili halves cut side up each on a 12in x 12in piece of aluminum foil. In a medium bowl, mix beans, rice, sausage, and taco sauce until combined. Spoon bean mixture evenly into chile halves. Sprinkle each half with cheese. Seal each pepper into aluminum foil, leaving air space at the top to prevent a cheese disaster. Place in hot coals until heated through and tender, about 15-25 minutes.
