THE KITCHEN — In queso you didn't know, you can learn how to make your own American cheese.
At least, YouTuber Joshua Weissman did — and he walked viewers through the grate steps to do it themselves. Nothing feta than homemade cheese!
You wouldn't brie-lieve your eyes watching Weissman combine sodium citrate, sodium hexametaphosphate, butter, gelatin and cheddar cheese on the stove. It's hard to feel bleu as Weissman has his whey melting the ingredients together before pouring them into a cookie sheet and letting the mixture set in the fridge.
American cheese sometimes gets a bad rap for being too plasticky, but it's nacho average cheese. Its ability to stretch and melt without breaking makes it a gouda choice for burgers and hot sandwiches.
