Roasted Shrimp w/Orzo Salad

Serves 5


1 1/4 lb Raw Shrimp, Tail off 51/60 ct

3 T Olive Oil

1 1/2 T Mrs. Dash

5 c Fresh Spinach, Chopped

1/2+5T Fresh Tomato, Chopped

1/2+5T Cucumber, Peeled, Chopped

5T Red Onion, Chopped

2 1/2 T Crumbled Feta Cheese

2 1/2+5T Dill Sprigs, Chopped

2 1/2 T Fresh Rosemary, Chopped Finely

5 ea Fresh Lemon Slices


1.Preheat oven to 400F; place shrimp, drizzle with olive oil and season with Mrs.Dash.

2. Roast shrimp for 5-6 minutes until the shrimp is cooked through; chill.

3. In a bowl, combine all ingredients (omitting out additional ingredients for garnish), toss well to combine flavors, chill.

Plate Assembly:

5. For each plate serve 1½ cups of salad.

6. Garnish with a lemon slice, fresh a fresh dill sprig along with 1 T each of diced tomato and cucumber. Top with 1 tsp lemon zest.
