SALT LAKE CITY (AP) — Elementary schools in Salt Lake City are offering kids a new way to get their veggies: salad bars.
Salt Lake City School District officials said Tuesday they're replacing fruit and veggies in plastic cups with portable self-serve stations.
Federal guidelines require schools to offer a vegetable and fruit at lunch, and school nutrition workers say the salad bars are aimed at reducing waste and increasing variety.
Unlike the plastic cups, they offer several fruit and vegetable choices and allow kids to pick up only what they want. The schools are hoping that helps kids eat more of the good stuff and throw away fewer plastic cups or uneaten foods.
School officials say the portable, self-chilled salad bars are also low-maintenance and the kids seem to like them so far.
