Yield: 5 ServingsDairy Free

Ingredients:

5 each 4 oz. Fresh Chicken Breast

½ cup Lite Soy Sauce

1½ tsp. Ginger Puree

1 tbsp. Dry Sherry

3 tbsp. Brown Sugar

3¼ tbsp. Ketchup

1½ tsp. Garlic,Chopped

¼ cup Chicken Broth

¼ cup Orange Juice

5 slices Fresh Pineapple

3 tsp. Fresh Green Onion,Diced

Preparations:

  1. In a bowl, mix together the soy sauce, ginger puree, sherry, sugar, ketchup, garlic, broth, orange juice. Let marinate, refrigerated for 12-16 hours.
  2. Mark chicken on a grill, one line each side.
  3. Preheat oven to 300F.
  4. Place chicken in a pan with remaining marinade; bake until an internal temperature of 165F is reached.
  5. Peel Pineapple; quarter vertically removing the core. Slice in 3/16” thick slices.
  6. Transfer to a parchment lined pan, roast in an oven on 375F for 12-15 minutes (or until golden brown).
Plate Assembly:Slice each chicken breast, place on plate and garnish with a slice of pineapple and green onion.
