Papanikolas Family Tiropita recipeIngredients:

1 large pkg. (8 oz.) cream cheese
1 pkg. cottage cheese (16 oz.)
1 lb. feta
1/4 - 1/2 c. Parmesan
4-5 eggs
1 lb. filo
1 lb. butter

Directions:
Mix cream cheese, cottage cheese, feta, Parmesan and eggs together in a mixing bowl. Beat until thoroughly mixed.

Lay filo out on counter. Cut it into strips - they should be about 2 1/2 - 3 inches wide (cut them in the direction that makes them about 16 inches long).

Melt butter on stove. Using a pastry brush, brush the melted butter onto a filo strip.

Put one teaspoon of cheese mixture onto the filo strip. The mixture should be centered about an inch from the end. Then fold one corner over the cheese mixture to make a triangle over the cheese. Then fold that into another triangle along the edges. Continue turning the triangles over all the way to the end of the filo (like folding a flag). Continue this process with the strips until the cheese mixture is gone.

Put the cheese triangles onto an ungreased cookie sheet. Bake at 350 degrees for 25 minutes or until golden brown.

These can be frozen with wax paper separating the layers.

Swedish Bread recipe

1/2 cup butter or margarine
1 cup of milk
1/2 cup of sugar
1 tsp. salt
2 tsp. ground cardamom
1 pkg. yeast
2 eggs
4 eggs (for brushing)

Dissolve yeast in approximately 3 tablespoons of warm water (110-115 degrees) with a touch of sugar, cover and let it foam up for 15 minutes. While yeast is rising, put butter and milk in a small saucepan and bring to a boil. As soon as it boils, remove from heat and set aside.

In a large mixing bowl, add sugar, salt, cardamom. Then add simmering milk to dry mix, add eggs, then add the yeast. Mix well. Then add approximately 4 cups of flour to liquid ingredients until it begins to pull away from sides. Cover and let rise in warm area until it doubles.

After it doubles, take dough out, knead it and divide into halves. Then divide each half into three parts. Roll each part into balls, then roll balls into even strands. Take one greased cookie sheet and braid strands together on sheet side by side to make two separate loaves. Cover and let rise again until loaves double.

Lightly brush on a mixture of egg yolk and 2 tablespoons of water on top of loaves. Bake at 350 degrees for 20 minutes or until golden brown.

Good ol' Green Jell-o

2 cups hot water
2 cups 7-Up
1 large pkg. lime Jell-o
1 cup crushed pineapple
2 cups mini marshmallows
3 bananas, sliced

Topping
1/2 cup sugar
2 Tbsp. flour
1 cup pineapple juice
2 Tbsp. butter
1 pkg. Dream Whip
