Yield: 5 Servings**Ingredients:**
- 10 slices Turkey bacon, cooked, chopped
- 10 cups Spring mix
- 1 ea. Cucumber, peeled, seeded, sliced thin
- 2 cups Baby heirloom tomatoes, halved
- 1 sprig Fresh basil, chiffonade
- 1 ea. Avocado diced
- 2 tbsp. Extra virgin olive oil
- ¼ tsp. Kosher salt
- 1 tbsp. Honey
- 3 tbsp. Extra virgin olive oil
- Whisk the salt and honey into the lemon juice and then slowly drizzle the olive oil into the dressing while continuing to whisk until fully incorporated.
- Divided equally per serving, toss the dressing with the spring mix, cucumber, tomato, basil and dressing; top with avocado then sprinkle with chopped bacon.
