This is a great crock pot dish that can be served as a side dish or a main dish.
4 oz spaghetti, broken into pieces
1 egg, beaten
1 cup sour cream
1/2 cup grated Parmesan cheese
2 cloves garlic, ;minced
3 cups Monterey Jack cheese
1 pkg frozen chopped spinach, thawed and drained
1 6 oz can of french fried onions
Cook the spaghetti, drain and set aside.
In a bowl, combine the sour cream, egg, Parmesan cheese and garlic. Add the cooked spaghetti, 2 cups of the Monterey jack cheese, spinach, and half the french fried onions. Pour into a lightly greased crock pot.
Cover and cook on low for six to eight hours. About 30 minutes before serving, top with the remaining 1 cup on Monterey Jack and the onions. Serve.
For a main dish, double the recipe. Shredded cooked chicken can also be added.
