Dan Knopp, owner of the Silver Fork Lodge in Big Cottonwood Canyon, is from Oswego, N.Y. When he finished school, he decided he wanted to see some of the world so he sold all of his stuff and headed west. He got as far as Utah and took a job at Snowbird Resort. Utah has been his home ever since.
Dan heard that the Light family wanted to sell the Silver Fork Lodge. He bought the facility in 1993 because he wanted a "cool place" to raise his children. His daughter Kassie was six months old at the time and is now 16. She works in the lodge while attending high school.
Joyce and I were sitting on the patio of the lodge on a warm Saturday evening. We both commented on the gorgeous setting and how amazing it was that people from all over the world come to this beautiful place only a 20-minute drive from the valley.
When we dined, the indoor and outdoor dining areas were full of diners enjoying the world-class cuisine. It was difficult for us to choose our meals because there were so many tempting offerings on the menu, but I opted for the baked penne ricotta and Joyce ordered the classic chicken piccata. Other choices included chateaubriand, loin lamb chops and boneless duck breast. Both of our entrées were beautifully prepared and presented.
While we were eating, we watched a wedding party on the lower lawn area. The lodge has great facilities for banquets and weddings and is popular for Christmas parties. Silver Fork Lodge has eight beautiful rooms in its bed-and-breakfast section. It is in demand during the ski season with nearby Solitude and Brighton offering world-class alpine ski venues. Back-country skiing and snowshoeing are also close at hand.
If you want to enjoy great food, wonderful ambiance and spectacular scenery, then visiting the Silver Fork Lodge is a must.
