Yield: 10 Servings
Ingredients:
- 1½ cups Chia Seeds
- 3 cups Coconut Milk
- ½ cup Coconut Cream
- ½ cup Granulated Sugar
- 1 tsp. Vanilla Extract
- 1 tsp. Salt
- 1 cup Almond Milk
- 3 pints Fresh Strawberries, Quartered
- 1 tbsp. Lime Zest, Minced
- 1 tbsp. Lime Juice
- 1 tbsp. Granulated Sugar
- 1 tsp. Salt
- Whisk or blend together the wet ingredients until smooth (lumps are gone from the cream of coconut).
- Add the remaining ingredients, stir well and let sit overnight or for at least 2 hours.
- After the pudding sets, adjust the thickness with more almond milk if necessary. Strawberry Lime Topping 1. In a medium sauce pan, combine the strawberries, lime zest, lime juice, sugar and salt.
- Place over medium heat and bring the mixture to a boil, stirring occasionally. The strawberries will release juice without any mashing.
- Reduce heat; simmer for 20-23 minutes or until sauce is thickened, stirring occasionally.
- Remove from heat and cool to room temperature; refrigerate.
