Coconut Chia Pudding with Strawberry Lime Topping with Intermountain Healthcare

Yield: 10 Servings

Ingredients:

  • 1½ cups Chia Seeds
  • 3 cups Coconut Milk
  • ½ cup Coconut Cream
  • ½ cup Granulated Sugar
  • 1 tsp. Vanilla Extract
  • 1 tsp. Salt
  • 1 cup Almond Milk
Strawberry Lime Topping**Ingredients:**

  • 3 pints Fresh Strawberries, Quartered
  • 1 tbsp. Lime Zest, Minced
  • 1 tbsp. Lime Juice
  • 1 tbsp. Granulated Sugar
  • 1 tsp. Salt
Preparations:Coconut Chia Pudding

  1. Whisk or blend together the wet ingredients until smooth (lumps are gone from the cream of coconut).
  2. Add the remaining ingredients, stir well and let sit overnight or for at least 2 hours.
  3. After the pudding sets, adjust the thickness with more almond milk if necessary. Strawberry Lime Topping 1. In a medium sauce pan, combine the strawberries, lime zest, lime juice, sugar and salt.
  4. Place over medium heat and bring the mixture to a boil, stirring occasionally. The strawberries will release juice without any mashing.
  5. Reduce heat; simmer for 20-23 minutes or until sauce is thickened, stirring occasionally.
  6. Remove from heat and cool to room temperature; refrigerate.
Plate Assembly:Divide equally between serving and top with strawberry lime topping.
