INGREDIENTS:
8 Slider buns - toasted on the cut side
8 Slices Thick cut bacon
2 Slices Roasted Pork Belly
Sliced tomatoes
Iceberg Lettuce
Smear of Honey Bourbon Mustard
Smear of Chipotle Aioli
HONEY BOURBON MUSTARD:
1/4 Cup bourbon reduced
1/2 Cup spicy brown mustard
1 Tablespoon Honey
1/2 Tablespoon horseradish
Chipotle Aioli
1 cup mayonnaise
1 to 2 minced Chipotle peppers plus adobo sauce
3 roasted garlic cloves
1 teaspoon lime juice
Salt and pepper.
DIRECTIONS: For the Honey bourbon mustard - bring the bourbon to a boil in a small sauce pan. Light the alcohol to and allow to burn off. Remove from heat and add the mustard, honey and horseradish and blend well. For the Chipotle aioli - roast the garlic in oil with the paper still on for about 5 minutes in the oven or in a shallow pan. Remove when toasted and the inside is soft. Remove the paper shells and smash the garlic in a bowl. Add in the mayonnaise, Chipotle peppers, lime juice and salt and pepper. Mix well.
Cook the bacon and pork belly on a griddle until crispy on the outside. Spread some butter on the slider buns and toast on the griddle until just brown. Spread the mustard mixture on one half of the bun and the chipotle mixture on the other half. Cut the bacon to fit the bun and pile it up. Add one slice of pork belly. Top with a slice of tomato and a leaf of lettuce and put the top on the sandwich.
