Greek Pizza w/ Salad
Yield: 5 Servings
Ingredients:
Hummus
½ cup Garbanzo Beans, Drained
¼ cup Water
1-1/2 tsp. Fresh Garlic, Chopped
Greek Pizza
1-3/4 cups Green Bell Pepper, Chopped
1-3/4 cups Red Bell Pepper, Chopped
1-3/4 cups Red Onion, Chopped
2-1/2 cups 7" Pizza Crust, Par baked
½ cup Hummus (see recipe below)
½ cup Pizza Sauce w/ Basil, Pre-made
1-2/3 tbsp. Fresh Oregano, Chopped
1-2/3 tbsp. Fresh Thyme, Chopped
1-2/3 tbsp. Kalamata Olive, Sliced
1-2/3 tbsp. Feta Cheese, Crumbled
Greek Salad
5 cups Fresh Romaine, Chopped
10 each Fresh Tomato, Wedges
5 each Greek Pepperoncini, Sliced
5 rings Red Onion, Sliced
Red Wine Vinaigrette
1-1/2 tbsp. Red Wine Vinegar
¾ tsp. Pure Honey
1-2/3 tsp. Lemon Juice
1 pinch Cracked Black Pepper
3 tbsp. Olive Oil
Preparations:
Hummus
1. Puree all ingredients in a blender until smooth. Greek Pizza
2. Preheat oven to 350F.
3. In a pan, sprayed with non-stick pan spray; sauté vegetables until tender.
4. Spread hummus onto pizza crusts; spread pizza sauce on top of hummus.
5. Divided evenly, layer vegetables and fresh herbs on top of sauce.
6. Crush feta; sprinkle on top of vegetables.
7. Place slice olives evenly on pizzas.
8. Bake for 7-9 minutes, until heated through and crust is crispy.
Greek Salad
9. Layer all ingredients together.
Red Wine Vinaigrette
10. Combine the vinegar, lemon juice, honey and pepper in a blender.
11. With the blender running on low; gradually add the oil.
Plate Assembly:
Plate 1 pizza with 1 cup Greek Salad tossed with 1 Tbsp. Red Wine Vinaigrette per serving.
