Operating a restaurant even in the best of times can be tough, but in the current economic climate it's harder than ever. Just ask Oswaldo Hernandez.
Oswaldo has been working in restaurants since age 16. Both his parents have extensive restaurant experience and after they purchased a restaurant in Kaysville, Oswaldo worked with them for several years. Later, he was hired as a cook at BC Chicken in Ogden. When the owners decided to sell the restaurant, Oswaldo bought it and has been running it ever since.
BC Chicken, which stands for "best charbroiled" chicken, is a Greek restaurant that sells all the traditional Greek foods, including gyros, souvlaki and rice pilaf. Chicken souvlaki is one of the restaurant's specialties. Meat is cut into kabob-size pieces, is marinated with authentic Greek spices and lemon for two days and is not cooked until it's ordered, so it's completely fresh. Salad, pita bread and the diner's choice of rice, potatoes or French fries are included with each platter. And on Mondays and Tuesdays diners receive free drinks all day long.
Oswaldo says BC Chicken came complete with an established client base when he bought it. The eatery is a favorite with residents who live and work in the vicinity of the Washington Boulevard location, but it has drawn diners from as far away as Brigham City, 30 miles away. Since taking over 18 months ago, Oswaldo has worked hard to maintain the high quality of food and customer service, and he soon intends to increase the size of the parking lot and renovate the building.
BC Chicken is distinguished by the quality of its food and for its friendly atmosphere. Oswaldo has made it a priority to serve the freshest food and purchase supplies locally as much as possible. His eventual goal is to open a second location in Brigham City and, if all goes well there, to then enter the Logan market.
