A recent study has shocked the scientific community: 88% of adult Americans are metabolically unhealthy, which puts most of us at serious risk of significant health issues.

One scientist that wasn't surprised by this alarming revelation is Ben Bikman, Ph.D., a Utah researcher and professor. Bikman has been studying metabolic disorders for the last 15 years and has observed the worsening trends firsthand.

"We're seeing Type 2 Diabetes, heart disease, obesity, migraines, dementia, Alzheimer's, arthritis, and more, skyrocketing over the last few decades," said Bikman. "And all of these seemingly distinct disorders have one thing in common—they're all caused or made worse by insulin resistance."

What is insulin resistance?

"Of the hundreds of hormones that mediate food and health, none has a greater role than insulin," said Bikman. "To put it simply, when food is present, insulin signals to every cell of the body to use it for energy or to store it as body fat for the future."

Bikman calls the enormous availability of cheap, refined carbohydrates a modern "plague of prosperity" and is a main reason for the enormous increase of average people having insulin resistance.

"With the typical American diet, people are eating far too many carbohydrates, they're eating 5-6 times a day, and their insulin is always high," said Bikman. "This is really why we see dramatic increases in people with insulin resistance."

"As in most cases, too much of anything is bad," said Bikman. "And insulin most definitely qualifies—we all need to become much more insulin sensitive again by keeping insulin levels low."

Yet Bikman says that almost everyone can improve their insulin sensitivity with an improved diet. "Food is what gets people into trouble, and food is what gets people out of trouble," said Bikman. "It's either the culprit or the cure."
