Buffalo Wings with a Twist A great, easy recipe for wings. Interchange the chile sauce with red hot sauce to create your Original Buffalo Wings, or with a different sauce to create your own twist. Adding flavoring ingredients like garlic, ginger, 5-spice, or other will also change the flavors of your wings. Be creative and have fun! Recipe by Chef Freyka Nunez del Prado.
Serves 4

Cook Time: 15-20 minutes
Ingredients:
2 lb. Wings Patted dry
Kosher salt
Fresh ground pepper, As needed
2 cup Corn starch
Canola oil, As needed
Sauce:
1 cup Red chile sauce, Salsitas Mendoza recommended
8 oz. Butter, unsalted
1 cup Honey
Kosher salt
Fresh ground pepper
Sides:
1/2 cup Chunky blue cheese dressing, Fresh from Harmons delicatessen department
2 large Carrots, Medium sliced on a bias
2 large Celery stalks, Medium sliced on a bias
Directions:
1. Preheat oil in a medium saucepan, over medium-high heat. Preheat oven to 400°F.
2. Lightly season the wings with salt and pepper. Set aside.
3. In a large bowl, add the corn starch and season it with salt and pepper.
4. When oil is hot, fry the wings. Shake off excess of corn starch before dipping into the hot oil.
5. When wings are golden in color, remove from oil and transfer them to a sheet pan lined with a griddle rack. Roast until wing’s internal temperature reaches 185°F.
6. To make the sauce, combine all ingredients in a small saucepan. Cook over medium heat until bubbly. Mixture will reduce just a touch, and will slightly thicken. Transfer ½ of the sauce to a large bowl and keep warm.
7. When wings are ready, add them to the bowl holding the sauce and toss them thoroughly. When wings are coated, serve them with a small portion of celery, carrots, small portions of blue cheese dressing, and a small portion of extra sauce if wanted.
