Soft Yeast Dinner Rolls

Prep Time 1 hour and 30 minutes
Cook Time 15 minutes
Ingredients:
10 oz. Water Warm
1 oz. Active dry yeast
1 large Egg
2 oz. White sugar
1 oz. Dry milk powder
22 oz. Unbleached flour, all-purpose
½ oz. Kosher salt
1 oz. Shortening
1 oz. Butter, unsalted Softened
For Baking
1 large Eggs Mixed with 1 tbsp. of milk, to make an egg wash
Directions:
1. Combine the water, yeast, egg, white sugar, and dry milk in a small bowl.
2. In the mixing bowl of an electric mixer, add the remaining ingredients (except the egg wash). Fit mixer with a paddle attachment. Mix to combine.
3. Add the water mixture to the mixer, all at once, mix until the dough comes together. Change attachment to a hook.
4. Knead with the dough hook on medium speed for 10 minutes.
5. Transfer the dough to a lightly greased bowl, cover, and place in a warm spot. Ferment until doubled, approximately 1 hour.
6. Punch down the dough. Let it rest a few minutes to allow the gluten to relax.
7. Divide the dough into 1.25 oz. portions and round. Shape as desired and arrange on paper lined sheet pans. Proof until doubled in size.
8. Carefully brush the proofed rolls with egg wash. Bake at 400°F until medium brown, approximately 12 to 15 minutes.
9. Optional shape dough in knots or other fun shapes.
