Southwest Flatbread Sandwich

Corner Bakery Cafe has some new baking goods on their menu, in addition to some savory flatbread sandwiches. On the menu today is the southwest flatbread sandwich.

Ingredients:

8-12 pack of flatbread

2-4 grilled chicken breasts or pull a rotisserie chicken

Pickled or fresh shaved Jalapenos

Slaw: 2 cups of shredded green & red cabbage, 1 cup shredded carrots & � bunch thin circle cut green onion

Corn & Tomato Salsa: Take 2 cup of your favorite fresh salsa and add 2 ears roasted or grilled fresh corn from the cob. Juice from 1 lime and add 1-2 Tbsp fresh chopped cilantro.

Avocado Ranch Dressing: Purchase off the shelf or take 2 cups ranch dressing and blend with � cup avocado; juice from a half of a lemon and lime.

Directions:

  1. Warm the flat bread.

  1. Add slaw.

  1. Drizzle / spoon avocado ranch dressing over top of the slaw; add chicken.

  1. Top with corn, tomato Salsa and sliced jalapenos.

  1. Fold together and enjoy!
