FRENCH BEIGNET
4 lb 6 oz Cake Flour
6 oz Sugar
1 1/2 oz Salt
5 lb 5 oz Butter
1 lb 5 oz Fresh Eggs
1 lb 5 oz Water
1 oz Puratos
3 oz Yeast
5 lemons (zested)
1/2 oz Orange Blossom Water
DIRECTIONS:
Mix all ingredients together. Make sure the yeast is separated from the salt.Let the dough rest in the fridge. Roll the dough. Cut like a diamond shape with an incision in the middle; pass the edge into the incision. Let it proof and fry till golden brown.
