The weather isn't looking so good for grilling this weekend but you can still cook up the perfect game meal.

Yes, it's all things March Madness cooking today and Jenn Hardman is with Harmons cooking up some Chicken Fajitas and pulled pork sliders.
BBQ Pulled Pork Sandwiches With Coleslaw
Ingredients:
One Harmons Pork Spoon Roast
Barbeque Sauce
Harmons Fresh Baked Chibata Rolls
Shredded Cabbage
Cole Slaw Dressing

Directions:
1. Preheat oven to 250 degrees
2. Remove plastic and place pork spoon roast in roasting pan (keeping roast wrapped in butcher paper).
3. Cook roast at 250 degrees for 2 hrs. per pound.
4. Remove roast from oven, unwrap and let cool for 5 minutes.
5. Gently shred the roast.
6. Add your favorite BBQ sauce (*recipe can be modified by using hot sauce, green chilies, or other spices to taste).

  1. Shred cabbage or use pre-packaged coleslaw mix.
    8. Place generous serving of pork on chibata roll.
    9. Top with coleslaw mixture.

Easy Chicken Fajitas
Ingredients:
Harmons Recipe Ready Chicken*
1 Packet of Fajita Seasoning
Red Pepper
One Green Pepper
One Onion
Canola Oil
Flour or Wheat Tortillas
Shredded Lettuce
Diced Tomatoes

(*Harmons also offers Recipe Ready Fajita Mix which already includes your chicken, vegetables and seasoning)
Directions:
1. Heat pan on medium
2. Add 1 tbsp of Canola Oil
3. Add chicken and vegetables to pan
4. Sauté until cooked through (about 10 minutes)
5. Warm tortilla in pan on both sides
6. Top tortilla with chicken and pepper mixture, shredded lettuce diced tomatoes and Chipotle Ranch Sauce to taste*

(*Recipe can be modified by adding bacon, mushrooms, cheese and other ingredients).

Chipotle Ranch Sauce
Ingredients:
Ranch Dressing
Chipotle Peppers (canned or fresh)
Fresh Cilantro

Directions:
1. Pour 16 oz of ranch dressing into bowl or blender
2. Add ½ 5 oz of chipotle peppers (canned or fresh)
3. Add 1 oz of fresh cilantro
4. Pulse blender or hand mixer until all ingredients are combined
5. Bake at 375 degrees for 25 minutes.
