Fettuccine Ingredients:
15 oz. Whole Wheat Fettuccine
2-1/2 tsp. Olive Oil
Red Clam Sauce Ingredients:
2 tbsp. Garlic, Chopped
2 tbsp. Shallots, Peeled, Chopped
¼ cup Cooking Wine
¼ tsp Black Pepper
1 lb. Artichoke Hearts, Drained
10 oz. Marinara Sauce
1-1/4 cup Ocean Clams, Chopped, Drained
3 tbsp. Fresh Basil, Chopped
3 tbsp. Fresh Parsley, Chopped
Mixed Squash Ingredients:
1/8 oz. Zucchini Squash, Matchstick
1/8 oz. Yellow Squash, Matchstick
1/8 oz. Red Bell Pepper, Julienned
Directions:
1. Cook pasta in boiling water until Al Dente.
2. Drain and rinse in hot water.
3. In sauté pan, add oil, garlic, and chopped shallots; sauté until fragrant.
4. Add wine, pepper, artichokes, marinara, and clams.
- Add cooked pasta and heat through.
6. Place on plate and sprinkle with fresh chopped parsley and basil.
7. Steam or blanch zucchini, squash and red pepper for a few minutes or until slightly tender; serve to the side of the pasta.
