SALT LAKE CITY — If you want to eat healthy that does not mean you have to eat boring.
Chef Tyler Elhert with McKay Dee Hospital shared the recipe for Berry Chicken Salad, which has 276 calories per serving.
Berry Chicken Salad
Ingredients:
15 oz. Baby green lettuce mix
5 each Precooked grilled chicken breasts
1 ¼ oz. Crumbled Feta cheese
5 oz. Fresh red raspberries
5 oz. Fresh blackberries
5 oz. Fresh blueberries
2 ½ oz. Cucumber, peeled and chopped
1 Tbsp. Olive oil
2 ½ oz. Fresh lemon juice
2 ½ oz. Fresh lime juice
1 Tbsp. Granulated sugar
Directions:
- Place lettuce mix in a container or bowl.
- Slice grilled chicken breast on a bias; place on lettuce.
- Top with feta cheese, raspberries, blackberries, blueberries, and chopped cucumber.
- Whisk oil, sugar, lemon and lime juices together to make dressing.
