It's not too late to celebrate St. Patrick's Day with your family. Harmon's has a great Irish Stew recipe you can serve tonight: Slow cooked Irish stew on top of garlic mashed potatoes.

INGREDIENTS

3 slices bacon, diced

1/3 tablespoons flour

1 teaspoon salt

1/2 teaspoon pepper

2 lbs beef chuck, cubbed

2 medium carrots, chopped

1 small white onion, chopped

2 cloves garlic, minced

2 cups beef broth

6 ounces tomato paste

1 cup beer

1/2 teaspoon thyme

1/2 teaspoon parsley

1/2 teaspoon rosemary

6-8 small potatoes, washed and chopped

1 tablespoon water

1 tablespoon cornstarch

DIRECTIONS:

Cook the bacon in a large pot. Remove, leaving the grease in the pan, and transfer to a paper towel lined plate and save for later.

Whisk together the flour, salt, and pepper. Toss the chuck pieces in the mixture until coated. Add to your pot and cook until browned in the bacon drippings. Remove from the pan.

In the same pan, saute the carrots and onions until tender. Stir in the garlic and cook one additional minute. Stir in the beef broth, tomato paste, beer, thyme, parsley, and rosemary. Stir in the browned beef and bacon. Simmer for two hours. Stir in the potatoes and cook one more hour or until soft.

Combine the 1 tablespoon of water with the cornstarch. Stir into the soup and cook five minutes or until slightly thickened. Serve over garlic mashed potatoes.
