Los Hermanos tips for creamy, fresh guacamole

Ingredients (Serves 8):
4 large avocados
1/2 cup all natural sour cream
a pinch of garlic powder
a generous pinch of salt and pepper
1/4 lemon squeezed

Directions: Cut the avocados in half and remove the pits. Scoop them into a medium sized mixing bowl. Combine all other ingredients. Mash the avocados with a potato masher into the other ingredients and then stir with a fork or whisk until smooth or until desired chunkiness. You can also use an emulsion blender to cream ingredients. Squeeze lemon juice on top to inhibit the avocado from turning brown, this will also balance the richness with some acidity. One of the reasons our guacamole is great is that we make it every day at the restaurant with fresh avocados! Tips on how to choose the perfect avocado for guacamole: Hass avocados are great for guacamole because they have a creamy texture as opposed to other varieties which can be stringy. Make sure the avocado is not underripe by pressing on the skin/squeezing, to make sure it has some give. If it feels noticeably hard, it is too underripe for guacamole. If it is overripe, the skin will be feel loose and separated from the fruit. Dents in the avocado are also an indicator that it is overripe and may be brown inside.
