Easter Trifle Serves 10

Ingredients: 1 white cake mix 3 Large eggs 1 Cup water 1/3 cup vegetable oil 2-3 Drops of red green blue, and red food coloring 1 (8 ounce) package of cream cheese, softened 1 1/2 cup heavy cream, whipped 1/2 cup powdered sugar 1/2 cup granulated sugar 1 package of orange, yellow, and pink bunny peeps 1 package of your favorite jelly beans 1 package of each yellow, blue, and pink Peeps

Directions For cake: Mix cake batter as per instructions using eggs, water and oil. Pour cake batter equally into four small mixing bowls and mix in two to three drops of different food coloring. Lightly grease 4 (6-inch) mini cake pans and lightly coat with layer of flour; pour batter into each pan. Bake at 350 degrees F for about twenty minutes or until a toothpick removes clean when poked into cake. Remove from oven and allow to cool. Once cool cut into one-inch cubes. You can partially freeze the cake to make cutting easier.

For filling: While cake is cooling beat the cream cheese and vanilla until smooth in a mixing bowl. Once cream cheese is soft and whipped add the powdered and granulated sugar and beat until incorporates. Separately whip heavy cream to stiff peaks and fold cream cheese and whipped cream together until just incorporated.

Layering: Taking the Peeps bunnies, circle the bottom of the bowl with alternating colors of bunnies with the faces looking out of the bowl. Inside of the bunny ring place a layer of cut cake to the top of the bunnies heads. In a piping bag with a star tip pipe a layer of filling about 1”

thick. Place another layer of cake about an inch thick. Pipe another layer of filling and cover with another layer of cake. Top by piping whip cream or filling along top in rosettes or swirls until top layer of cake is covered. Place three different colors of Peep Chicks facing beak out with tails touching at the apex of the trifle. Garnish with Jelly Beans.

Refrigerate and serve.
