Key Lime Pie Recipe

3 Egg Yolks 2 Tsp Lime Zest 1 Can Sweetened Condensed Milk 2/3 Cup Freshly Squeezed Lime Juice or Store Bought Lime Juice

Beat egg yolks and lime zest together in a stand mixer or hand mixer until light and fluffy. Add sweetened condensed milk and beat until thick and fluffy. Fold in Lime Juice slowly until incorporated. Pour in preformed tart dough or over crust of your choice. Bake at 350 F for about 10 minutes or until the filling has set up. Cool in fridge or freezer for at least 2 hours and then serve and enjoy.

Tart/Pie Dough Recipe

2 1/4 cups unsalted butter 3 cups all-purpose flour 3/4 cups powdered sugar 1/2 tsp salt 3 egg yolks 3 TBS cold water 1 tsp vanilla

Cut butter into small pieces, set aside. In a bowl or food processor add flour, sugar, and salt; pulse or mix. Add butter pieces and mix until it looks like small pea size bits. In another bowl add egg yolks, water and vanilla and mix until combined. Add egg mixture to bowl or food processor and pulse until a dough comes together. Wrap the dough into a disk and refrigerate for at least 1 hour before working with it. Now you can work with the dough in your desired recipe.
