8 cups sliced Sweet Potatoes 2 cups brown sugar (not packed) -Peel potatoes, wash off, and dry with paper towel. -Thinly slice. -Put potatoes in mixing bowl, add brown sugar and stir to coat. -Spread potatoes in large frying pan with tight fitting lid. -Cook on very low heat, stiring often, until the formed liquid has turned to a heavy syrup and potatoes are tender. There should be no excess syrup left in the pan. All should be stired through potatoes. -Careful not to over cook or the syrup will harden. In that case add a little water and reheat to thin. This recipe is a wonderful holiday treat, especially enjoyed during Thanksgiving and Christmas. The only thing you are going to have to worry about is if you made enough!!
