The Corner Bakery now has a new location in Bountiful, and today they gave us a little taste of a new item on their menu.
Spicy Asian Pork Hot Toasted Sandwich
RECIPE (makes 4 sandwiches)
Pulled Pork 1 - 1 ½ lb
Asian BBQ Sauce 12 - 16 oz
Sweet & Spicy Slaw 2 - 3 cups
Sliced Cucumbers 12 slices - thin bias cut
Cilantro Sprigs 8 - 12 sprigs
Jalapeno 2 each - shave - sliced super thin or you can use pickled jalapenos
Sandwich Bun 4 each - soft center with a little chewy outside is best
Soften Butter Thin coating on the bread
DIRECTIONS:
1. Hinge the bread and lightly butter - place on a griddle and toast to a golden brown.
2. On a griddle or sauté pan, heat the pulled pork.
3. Add about 1 cup of Asian BBQ Sauce and simmer for 3 - 5 minutes.
4. Place the buns on a tray and arrange the cucumber sizes on top of the buns.
5. Top with the hot pork.
6. Top the pork with the Sweet & Spicy Slaw.
7. Arrange cucumber sprigs and shave a little fresh jalapeno on top - remember a little goes a long way.
8. Use additional dressing to for sandwich dip.
ASIAN BBQ SAUCE - Blend 8 oz of your favorite Ginger Soy Dressing with 8 oz of your favorite BBQ Sauce.
SWEET & SPICY SLAW:
Shredded Cabbage / Slaw Mix 8 oz
Shredded Carrots 3 oz
Green Onions - thin circle slices 1 Tbsp
DRESSING:
Rice Wine Vinegar 2 oz
Siracha 1 ½ tsp
Sugar 2 oz
Salt ¼ tsp
DIRECTIONS:
1. Mix dressing together and toss over vegetables. 2. Let sit for at least 20 minutes.
