June 16th is National Fresh Veggies Day, and Whole Foods is helping us celebrate with a great veggie dish.
Grilled Tomato Caprese:
1 Cup cherry tomatoes - tossed in 1 T. olive oil and grilled on a very hot grill basket for about 1 minute.
Cool and toss with:
1 Cup fresh mozzarella balls
8 oz fresh basil thinly sliced
3 T. olive oil
1/2 teaspoon sea salt
1/4 teaspoon ground black pepper
Plate and drizzle on top with:
3 T Aged Balsamic vinegar
