Disney on Ice skater Lauren McHenry knows all about preparing a quick lunch on the go. But these recipes aren't just for athletes, they apply to busy moms, or anyone else who only has a minute to make something easy and healthy.

Quick and Easy Tuna Salad with Crackers

1 tuna packet

1 avocado

1/4 cup diced sweet or white onion

1/4 cup diced tomatoes

1/4 cup diced celery

minced garlic


Mix together and serve on reduced fat Wheat Thins.
