This is Chris Redgrave for Zions Bank Speaking on Business.
The overall comfort you feel in the restaurant, the staff and the delicious yet simple menu, almost create a throwback hippy atmosphere. The owner, Kathie, is one cool hand luke. Not only does she not get rattled, she treats everyone with kindness and respect. She says how blessed she is to be living her dream in the best neighborhood to have the bistro. She believes wholeheartedly in being a good neighbor and asks her guests to understand that she has next-door neighbors.
This interesting entrepreneur of Avenues Bistro on Third seriously bootstrapped this operation when she passed the hat to get the funds so she could open. Her network of supporters came through, and she has grown her business in a short period of time.
She wants to give back and support local as much as possible. Kathie has a goal of being 100 percent Utah local with everything from our famous Utah lamb to our local honey, cheese, fruits and vegetables. Kathie already goes to the Farmers Market to get her produce or she'll go to one of her many gardens and pick it herself. She is drawn to organics. Don't be surprised if the tomato, beets or eggplant you're eating was just picked that morning from her garden.
When you think about her lofty goal of being 100 percent Utah grown at Avenues Bistro on Third it's impressive. She has even found a person who imports olives and processes them right here to make his own Utah olive oil. Oh, I almost forgot to mention her gorgeous chickens producing the best Utah eggs that they use every day while preparing one of their remarkable desserts at the in-house bakery. Kathie has a Speakeasy downstairs, and the patio is open. Avenues Bistro on Third has their liquor license, along with house made fare featuring local ingredients and fresh from the garden salads.
