Downtown Salt Lake is loaded with small, attractive, and compelling restaurants. I’m thinking of places like Martine, Caffe Molise, Bambara, Passages, The Atlantic, Cucina Toscana and now, a new eatery called The Vienna Bistro.
The Vienna Bistro is a charming little restaurant located in the Kearns Building on South Main Street downtown. It’s the brainchild of award-winning chef Frody Volgger, who does everything at The Vienna Bistro from woodworking to hand making the sausages and cured meats served there. Originally from the Austrian Alps, Frody has worked around the world in his 32 years as a chef and culinary consultant, including opening The Depot in Park City, working at The Lodge at Pebble Beach, and managing the opening and closing ceremony receptions of the Olympic Winter Games.
Well now with The Vienna Bistro Frody has a place of his own, where he can serve what he calls “nutritious meals with international appeal – meals to enjoy.” All of Frody Volgger’s dishes begin with fresh ingredients and none of the food is pre-fabricated. The menu at The Vienna Bistro features Austrian, Swiss, and German fare with dishes ranging from traditional – let’s see if I can get this right – Zwiebelrostbraten, which is ribeye steak with onions and demi-glace, to authentic Austrian apple strudel.
I could eat Frody’s homemade spaetzle every single day, especially alongside a plate of rahmschnitzel, with is thin-sliced veal in a light cream sauce. And there are also fresh fish, poultry, and veggie dishes at The Vienna Bistro, as well as Austrian sandwiches at lunchtime called Palachenken.
That’s Chef Frody Volgger’s Vienna Bistro – just another good reason to indulge in downtown dining in Salt Lake City.
