OK, there are buffets and then there are buffets. One of the most bodacious buffets I’ve ever encountered only takes place a couple nights a week during ski season up at Deer Valley Resort. It’s the Wednesday and Thursday night Fireside Dinner at Empire Lodge in Deer Valley and these dinners are terrific.

Deer Valley’s Fireside Dinners are really fireside dinners and some of the food is even cooked in the big stone fireplaces at Empire Lodge. Why the folks at Deer Valley even designed a special raclette machine to hold huge chunks of raclette cheese over the fire. It then drips down onto hot plates and guests eat the scrumptious melted raclette with fresh-baked baguettes, steamed potatoes, pearl onions and such.

After a round of raclette you might want to try one of the Fireside Dinner homemade stews. If you can’t choose between the veal and mushroom stew, beef Burgundy, or the luscious vegetarian stew, well have all three! Remember this is a buffet.

But leave room for delectable chocolate and caramel fondue, served with fruit fruits, biscotti, and nuts for dipping. Most of the kids at Deer Valley’s Fireside Dinners just seem to head straight for the dessert fondue station and skip all the other good stuff.

That’s the bodacious buffet – otherwise known as Deer Valley’s Fireside Dining – Wednesdays and Thursdays during ski season up at the Empire Lodge.
