Sausage and Tomato Pie

Ingredients1 frozen pie crust, baked
1 cup shredded mozzarella cheese
1 pound sweet Italian sausage, browned
2 egg yolks
1 egg
1/2 teaspoon salt
1 cup plus a little whipping cream
2 tomatoes, halved and sliced
Dried oregano

Directions

  1. Preheat oven to 425 degrees. Place pie crust on baking sheet. Put sausage and cheese in pie crust.
  2. Beat together egg yolks, egg and salt. Mix in cream. Pour into pie crust.
  3. Place tomatoes in circular pattern on top. Sprinkle with oregano.
  4. Bake 15 minutes at 425 degrees. Reduce heat to 300 degrees and bake another 40 minutes.
  5. Let stand for 10 minutes. Serve warm for breakfast or dinner.
