For today's Your life Your Health series, Harmons Grocery stores has cooking classes for kids that will get them excited to cook all while making a healthy dish.
Grilled Avocado Cups with Chicken Corn and Tomato Salad
Ingredients:
4 slightly firm avocados
1 lime
2 cups pulled rotisserie chicken
3 ears fresh corn
1/2 pint cherry or grape tomatoes
2 tbsp. fresh cilantro chopped
2 green onions sliced thin
2 tbsp. lemon juice
2 tbsp. olive oil
Salt and pepper to taste
Directions:
Clean chicken from carcass and set aside.
Slice tomatoes in quarters, cut corn off of cob, and add corn, tomatoes, onions, cilantro, lemon juice, and olive oil to bowl and mix. Season with salt and pepper to taste.
Set corn salad aside and cut avocados in half lengthwise and remove pit.
Spray a light coating of non-stick spray on grill plate or grill and heat on high.
Place avocado on grill for approximately 10 minutes or until marks appear on the flesh and rotate a quarter turn- repeat to produce a nice grilled hatch pattern.
Cut lime into eight wedges.
Place about a ¼ cup of salad into the pit hole of the grilled avocado and lay several pieces of chicken on top-load them up.
Garnish with a few cilantro sprigs and lime wedge and serve.
Ingredients:
½ cup Harmons almond butter
¼ cup almond flour
1 cup Harmons raw almonds
2 tbsp. dried milk powder
¼ cup cacao powder
2 tbsp. local honey
1 tsp. vanilla extract
2 tbsp. canola oil
Directions:
Place all ingredients in a food processor and pulse until the almonds are diced into small pieces and everything is well combined and in a pasty-dough.
Do not over-process the raw almonds- you want chunks.
Take a spoonful and roll in the palms of your hand in a ball shape.
Refrigerate until ready to eat to keep them firm.
