This recipe is SOOOO easy - and you're too busy getting ready for Christmas for anything hard right now.

INGREDIENTS

2 pound flank steak (or two depending on the size of your family)
small bag baby carrots (or two)
bottle peanut sauce (in the Asian aisle)
1 cup coconut milk

DIRECTIONS

1) Slice flank steak into half-inch strips against the grain. Place in crock pot.
2) Pour carrots on top. Then pour peanut sauce on top of that.
3) Turn on low for 8 hours.
4) Stir in coconut milk just before serving. (I served over brown rice.)
