All-Purpose Rub
1 tbsp garlic powder
1 tbsp onion powder
2 tbsp pepper
2 tbsp paprika
2 tsp dry mustard
2 tsp celery seeds
2 tsp brown sugar
1 1/4 tsp salt

Directions

Preheat oven to 400 degrees. Heat large ovenproof skillet on stove, medium high. Coat rub evenly on both sides of pork chop, using about one teaspoon of the rub per pork chop. More or less to taste.

Coat pan evenly with olive oil or vegetable oil, approx 1 tbsp.

Place pork chops in skillet and cook ON ONE SIDE ONLY FOR TWO MINUTES.

Turn chops over and place in to preheated oven.

For thick chops 6-8 minutes, for thinner cuts, 4-5 minutes. Just as long as they're not pink in the center.

Remove pan from oven, and you can drizzle some of the oil from the pan over the pork chops, mixed with the spices and juices!

Remaing rub can be stored in an air-tight jar like any other spice.
