After Pam Schulte's husband was diagnosed with celiac disease six years ago, he started tasting the gluten-free products on the market. And he didn't like what he found, especially with baked goods. Sensing a market need, Pam got to work and started experimenting. She didn't have any formal training but did grow up baking all the time. So, she started using proven recipes, improving and changing them to now be gluten-free. The result of all this was the Pepperdine MBA graduate launching a new business, Lucky Spoon Bakery.

Lucky Spoon Bakery, headquartered in Salt Lake City, provides gluten-free muffins, cookies and cupcakes to Whole Foods, Harmon's, Winder Dairies and Sprouts in 30 different states. The company has grown to include a staff of 13 employees.

Pam has watched the gluten-free market get stronger, with increased product selection and better quality products than when she started Lucky Spoon Bakery four years ago. There's also more competition, but Pam says this means it's important to get it right every time. She uses only the best ingredients, without any preservatives for these recipes she developed all on her own.

Lucky Spoon Bakery has grown a diverse customer base. They have fans from every age group and walk of life, from those in their golden years to others who eat gluten-free just because they want to. Right now Pam is dedicated to offering tasty gluten-free products that her customers will love too, starting with her own husband who has been an important support for the business. Earlier this year she launched a line of gluten-free cupcakes, and her customers love it.

Pam is grateful for the welcoming business climate in Utah, named one of the friendliest in the nation according to eWeek, and says it's helped Lucky Spoon Bakery to grow and thrive. She plans to continue developing strong relationships with her retail outlets, expanding Lucky Spoon into more states.
