Bear Lake Raspberry Marmalade
INGREDIENTS
375 Grams Pureed Fresh Bear Lake Raspberries with Seeds
125 Grams Sugar
7.5 Grams Fruit Pectin (any Brand)
DIRECTIONS
• Mix the sugar and pectin together.
• Pour the raspberry puree in a heavy bottom sauce pan.
• Bring raspberry puree to a simmer.
• Slowly add the sugar, and pectin mixture.
• Bring back to a simmer until thickened, and glossy.
• Transfer to a ceramic or stainless steal container
• Cover tightly with plastic wrap, poke a few hole for steam to escape.
• Let cool till room temperature, then place in refrigerator.
