Du Monde Gourmet: South African Meatloaf

Owner and chef of Du Monde Gourmet, Meryl Van Der Merwe showed us how to make a Cape Malay dish, also known as South African meat loaf.

Du Monde Gourmet, is a newly opened commercial kitchen in Park City that serves globally inspired cuisine. It is a full culinary platform, providing different levels at different price points.

BABOOTIE RECIPE - (South African- Meat Loaf) Serves 6-8 persons.

INGREDIENTS:

1 Pound Lamb or Beef, or a mixture of the two

Vegetable oil- Sauté

2 cups Onions, chopped

5 ml (1teaspoon) crushed Garlic (Fresh)

30 ml (2 tablespoon) Curry powder

15ml (1 teaspoon) Ground Cumin

5 ml (1 teaspoon) Ground Turmeric

15ml (1tsp) Ground Coriander

7.5ml (1/2 teaspoon) Nutmeg

¼ tsp Cayenne Pepper

2 slices White Bread or Bagel

60 ml (1/2 cup) milk

1/2 cup Chutney

1/2 cup Vinegar (White Balsamic)

1 egg

2 teaspoon salt

2 teaspoons Ground Black Pepper

½ cup Sultanas (golden raisins)

½ cup Slivered Almonds, roasted in a dry frying pan

6 Bay leaves

TOPPING:

250 ml (1 cup) milk

2 eggs

2 ml (1/2 teaspoon) salt

DIRECTIONS: Pre heat the oven to 375 °F. Soak the bread in milk and set aside. Sauté the onions in Vegetable oil on low heat until translucent. Add the fresh Garlic and stir for 1 min. Add the Spices all at once and stir. The spices will open up, now add the ground meat and stir until cooked. Add the vinegar and the chutney. Squeeze out bread and add to the mixture. Add almonds and sultanas and season with Salt and Pepper. Pour mixture into a oven proof dish and bake for 45 min. Remove and pour over the topping egg mixture and garnish with Bay Leaves. Bake for another 15-20 until egg is firm. Serve with Plain rice or Yellow Rice Pilaf.
