Moudi Sbeity from Laziz stopped by Monday to cook sauteed cubed potatoes with a garlic cilantro pesto.
Ingredients:
1.5 - 2 lbs Yukon gold potatoes
1 bunch cilantro
10-12 cloves garlic
1 tsp pepper flakes (or a milder pepper seasoning) - optional
Olive oil
Directions: Peel the potatoes and dice them into small cubes. Heat some oil in a pan and lightly fry the potatoes on medium heat till all sides are golden brown. When the potatoes are done, add 1/4 cup water and cover till the water has evaporated and the potatoes have cooked. Meanwhile, pluck and finely chop cilantro. Mash garlic in a mortar with salt. Mix the chopped cilantro and garlic in a small saucepan with olive oil over low heat till you smell the fragrance of the mixture. Add the cilantro-garlic mixture and any other spice to the potatoes and mix well. Cook for another 5 minutes. Serve hot or at room temperature with any sauce on the side. You can also serve with a side of rice.
