Recipes: Chocolate and Red Velvet Whoopie Pies

If you want to whip up a delicious homemade dessert for your sweetheart on Valentine's Day, try these recipes for Whoopie Pies. The owner of the House of Bread bakery, Lynne Aoyama, show us how to make them.

House of Bread
Chocolate Whoopie Pies

1/2 cup shortening (trans fat free)
1 cup brown sugar
1 egg
1 teaspoon vanilla

Cream together shortening, brown sugar, egg, and vanilla. Add 1/2 cup milk.

In a separate bowl, combine:

2 cups All-purpose flour
1/4 cup unsweetened cocoa powder
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt

Mix wet and dry ingredients together.

Scoop out 1/4 cup and shape it in a 2 -inch circle or ball on a sprayed out cookie sheet (an ice cream scoop is an excellent way to portion out). Keep 2 inches between cookies. Bake in a 350° oven for 15-20 minutes or until they are no longer wet. Remove from baking sheet after they have cooled.

Filling:

Beat together
4 oz. (1 stick) softened butter
3/4 teaspoon vanilla
3/4 cup powdered sugar
7 oz. jar marshmallow cream

Spread generous amount of filling on the flat side of one cookie then sandwich flat side together of another cookie. Store in an airtight container or wrap each one individually with clear plastic wrap to keep whoopie pies moist.

Makes 6.

Red Velvet Whoopie Pies

2 tablespoons red food coloring
½ tablespoon cider vinegar

Cream together shortening, brown sugar, egg, and vanilla. Add 1/2 cup buttermilk.

In a separate bowl, combine:

2 1/4 cups all-purpose flour
2 tablespoons unsweetened cocoa powder
1/2 teaspoon baking soda
1/2 teaspoon salt

Mix wet and dry ingredients together.
