SALT LAKE CITY — Many of us talk about getting healthy in the New Year. Friday we shared a delicious way to make that happen.

Easy, Healthy Lunch for the New Year
Sautéed Shrimp & Whole Wheat Couscous Salad
Ingredients:
1/4 C. broth, orange juice or coconut water
1 1/2 pound medium shrimp, peeled and deveined
2 cloves garlic, finely chopped
Salt and pepper to taste
1 1/2 tsp. lemon juice
8 cups loosely packed baby field greens or baby kale
1/3 C. Italian-style vinaigrette dressing
1 1/4 C. uncooked couscous, prepared according to package directions
2 Tbsp grated Parmesan cheese
Method:
Heat 1/4 cup of liquid in a large skillet or wok over medium high heat. Add shrimp, garlic, salt and pepper and cook for about 5 minutes until shrimp is pink but not rubbery. Add lemon juice and stir well.
Arrange field greens in a serving bowl and toss with dressing. Arrange salad on plates with shrimp and couscous, garnish with Parmesan cheese. This is perfect made the night before and packed for lunch.
