With ski season now in full swing, it's an ideal time to head up to Deer Valley Resort for an evening of Fireside Dining. On Wednesday, Thursday, and Friday evenings during the ski season Deer Valley's Empire Canyon Lodge is transformed into a cozy European Alpine restaurant with slopeside cuisine served from four rustic stone fireplaces in the lodge.

Start out at the Empire Fireplace for toasty Swiss Raclette cheese and steamed new potatoes, cured Italian and Swiss meats, fresh baked baguettes, and condiments which include mustards made in-house.

Over at the North Fireplace you'll help yourself to hearty stews and fricassees like veal and venison stew, beef short ribs, quail, wild mushroom stew, and buttery roasted potatoes. Next stop at Deer Valley's Fireside Dining is the Ontario Fireplace, where you can load up your plate with roasted leg of lamb cooked slowly by the fire, brushed with fresh herbs and seasonings and accompanied by Cambozola leek Dutch oven potatoes, risotto, or polenta.

Now here's the part of Fireside Dining that kids love - and so do I: The Lobby Fireplace features chocolate, caramel, and white chocolate Grand Marnier fondues with dipping choices of strawberries, bananas, apples, dried apricots, cinnamon pound cake, and almond biscotti. Are you fired up yet?

And for a small extra fee, horse-drawn sleigh rides are also available just outside of Empire Lodge. So for a toasty evening of Fireside Dining, just call Deer Valley Resort for reservations.
