Recently a KSL listener named Bret emailed me to let me know about a new restaurant that he and his wife had enjoyed called Corbin's Grill. So last week I decided to give it a try and Bret was spot on, Corbin's is a terrific addition to the Utah dining scene.

Corbin's is located near the Layton Hills Mall, on the new "restaurant row" and next door to the Davis Conference Center and Hilton. And wow, just driving up to this beautifully designed restaurant you know you're in for a treat. But the interior of Corbin's is even snazzier, with a glassed-in waterfall wall, gorgeous wood tables, beautiful artwork and food to match.

The specialty at Corbin's Grill is hand-carved steaks, seared to your liking on a wood burning grill. The perfectly cooked bone-in ribeye I had there last week was way good. And don't fret if you're not a meat eater. Corbin's offers lots of seafood dishes like seafood risotto, shrimp scampi, grilled salmon, and cold water lobster, in addition to specialties such as oven baked stuffed eggplant, pork saltimbocca, chicken piccata, and twice-cooked baby back ribs.

But regardless of what sort of entrée you choose, I strongly recommend an order of the yummy spinach artichoke dip at Corbin's. I'm not especially a fan of artichoke dip but I loved this version. Ditto for the fried brie with pomodoro sauce, which is sort of an upscale slant on typical fried mozzarella sticks.

Add outstanding service from waiters like Clayton and Jef, Corbin's manager to the mix and you've got what is surely destined to become Layton's most popular fine dining restaurant: Corbin's Grill.
