2 cups pancake mix (Bisquick)
1 cup milk
1/2 cup pumpkin puree
1 Tbsp vegetable oil
1 large egg
Vegetable cooking spray
Confectioners' sugar
Applesauce (optional)
Fruit (optional)
Preheat a waffle pan to medium high. Combine the pancake mix, milk, pumpkin puree, oil, and egg in a medium bowl and whisk until smooth.
Spray the preheated waffle pan with the vegetable cooking spray. Spoon a half cup of the batter into the pan and spread the batter to make smooth.
Cook and sprinkle with the confectioners' sugar. Serve with applesauce and fresh fruit.
