Thirty three years ago three young businessmen came together to build one of the most successful restaurant groups in the United States. . . right here in downtown Salt Lake City. Gastronomy, Inc., better known as the Market Street Grill, the Oyster Bar and the New Yorker! This is one of the first successes of Downtown Rising before it was Downtown rising!

With their eye on the business principle of high-quality service, casual surroundings and delicious food at a perceived value, this dynamic trio of John Williams, Tom Guinney (gin-ee) and Tom Seig were the pioneers of "fresh seafood" in Utah.

I'm not talking about fresh frozen, but fresh from the ocean to your dining table in anywhere from 24 to 48 hours. They would meet Western Airlines, before it became Delta, on the tarmac at the airport to ensure the fish they were receiving was of the highest quality food for their customer base.

If being successful restaurateurs wasn't enough, the way Tom, Tom and John found the buildings to house their restaurants was another story. They would purchase derelict buildings in downtown Salt Lake City, renovate them and build their restaurants inside those buildings. And if you've ever been to the Taddish Grill in San Francisco, the inspiration for much of the restaurant décor came from this over 100-year-old treasure.

Sticking true to their business feature of excellence, while they are known for the amazing variety of fresh seafood that they serve, Gastronomy is also known for the quality of their steaks which are every bit as good as the seafood. The clam chowder, served with a delicious sourdough bread, is known all over the country.
