Bacon Jam

Ingredients:
2 lbs bacon chopped
2 lg. sweet onions, chopped
1 tbsp. minced garlic
1 tsp. smoked paprika
1 tsp. hot sauce (Frank’s, etc) or more if you like it spicy
2 tbsp. bbq sauce
¼ c. balsamic vinegar
½ c. brown sugar
½ c. maple syrup
1 tsp. salt
½ tsp. pepper
Directions:
1. In a saute pan over medium heat, cook the bacon until almost crisp.(don’t cook until crisp, because softer bacon makes for better texture in final jam) Remove the bacon from the pan while reserving a little fat in the pan to cook the onion. Turn the heat to medium-low.
2. Cook the onion in the same pan for about 20 – 30 minutes, stirring often until it starts to slowly caramelize. Add the garlic and cook 2 more minutes.
3. Add the rest of the ingredients including the cooked bacon and bring to a simmer. Reduce the heat to low and cook 20 more minutes or until the mixture becomes thick like jam. Remove from heat and cool in the fridge. Store in whatever you container you like. It stays nice in the fridge for at least a week.
