Stuffed Pineapple & Mango Salsa

Ingredients:
As Needed Extra Virgin Olive Oil
1 Pineapple, trimmed, sliced into rings
1 Avocado, small diced
2 Poblano’s, charred, seeded, small diced
½ Small Red onion, small diced
1 Serrano, seeded, small diced
⅓ Cup Chopped Fresh Coriander
1 tablespoons lime juice
1 tablespoon Hatch Chile Vinegar
1 ½ teaspoons sugar
Directions:
Heat a grill over high and create grill marks on the pineapple, 5 minutes. Remove, cool, and small dice. In a bowl mix oil with lime juice, vinegar, and sugar. Adjust ‘tangy’ aspect of the dressing with more oil to desired effect. In the same bowl combine all ingredients and toss lightly. Take another pineapple and cut in half lengthwise. Hollow out with a melon baller and use for another application (kabobs!) Fill the shell with the salsa, serve with chips, and enjoy!!
