White Cheddar Stuffed Burgers Serves 8 Ingredients: 2 pounds (85 percent) ground chuck or sirloin Salt and freshly ground pepper 4 ounces sharp cheddar, cut into cubes 8 hamburger buns 8-16 sliced tomatoes 8 lettuce leaves Ketchup Mayonnaise Instructions: Heat a grill pan or grill over medium-high heat. Lightly spray with cooking oil. Meanwhile, liberally season the ground beef with salt and pepper and mix to combine. Form 1 patty. Make an indent in the center, add 3-4 cubes cheese, top with a small amount of beef and seal. Repeat with remaining beef and cheese. Place beef patties on grill and cook until golden brown, about 5 minutes. Flip and continue to cook until desired doneness, about 5 more minutes for medium-rare. Transfer to a plate and let the meat rest. Toast the buns and serve the hamburgers with tomatoes, lettuce, ketchup or mayonnaise. Salmon Burgers Serves 4-6 Ingredients: 2 pounds skin-off salmon Salt and freshly ground white pepper 6 green onions, chopped 2 teaspoons Old Bay seasoning 1/2 cup dried breadcrumbs Avocado slices Alfalfa sprouts Hamburger buns Tartar sauce (see recipe) Instructions: Using a food processor, add the salmon and pulse 5 times until coarsely chopped. Season with salt and pepper. Add green onions, Old Bay seasoning and breadcrumbs and pulse once or twice until combined. Divide evenly into patties, cover with plastic wrap and chill in the refrigerator. Remove from the refrigerator 15 minutes prior to cooking. Heat a grill pan or grill over medium-high heat. Clean the grill grate and season with canola oil. Add the salmon patties and cook until golden brown, about 5 minutes. Flip and cook on the other side until golden brown, about 5 minutes. Serve with avocado and alfalfa sprouts on buns slathered with Tartar Sauce. Tartar Sauce Makes 1/2 cup Ingredients: 5 tablespoons mayonnaise 1 tablespoon dijon mustard 2 teaspoons sweet pickle relish 1 tablespoon capers, rinsed, drained, and chopped 1 teaspoon chopped fresh dill Salt and freshly ground pepper Instructions: In a bowl, combine all the ingredients. Let sit for 15 minutes to allow ingredients to blend.
