September 16, Mexico's Independence Day, is one of the biggest parties of the year in Central America. Once ruled by Spain, Mexico gained its freedom after more than a decade of fighting in 1821, according to the Library of Congress. Though that day was August 24, Mexican Independence Day is celebrated on September 16.
Every year since, the holiday is celebrated with nationwide parades, fireworks, speeches, music and traditional dishes.
